Veggies – Fresh and Frozen

I’m a big proponent of buying large bags of frozen organic vegetables from Costco so I can toss a handful of veggies from freezer right into the pan to enhance whatever dish I’m making. Veggies that will be frozen are usually picked at peak ripeness, then typically blanched and flash frozen immediately. There is minimal loss in nutrients. A few organic veggies to consider buying frozen to store in your freezer are: broccoli, cauliflower, carrots, peas, and brussel sprouts.

Of course, fresh veggies just picked from the garden is ideal and ranks high on the YUM-O scale. Spinach or carrots just picked from the garden tastes so delicious compared to what you buy in the grocery store, which most likely traveled far to get on that grocer’s shelf. I have fond memories of picking fresh garden goodies with my mother, which we enjoyed all summer long. We dined on nutritious food and ate well. Living in Minnesota at the time, we would plan for the long winters and blanch/freeze the fresh garden produce. We ate garden fare from the well-stocked freezer all winter long.

If you don’t have a garden, I highly recommend you attend a local organic farmers market to buy fresh harvest. I go on Sundays to our local farmers market for fresh veggies and fruit. This encourages you to eat seasonally and it’s a great way to stay connected with where food comes from and as well as support the organic growers.
